I have just started taking it out about 8 to 10 minutes early when making the 2 lb. size and setting the crust - light - and using the 1 lb. setting to get the "shorter" time. I take the dough out at the "pause" setting, shaping half of the dough and putting it back in the oven to make a nicely shaped 1 lb. loaf. Use the other half (refrigerate and save for later) or bake traditionally in the oven - if you have a convection oven feature do use that.

I love the pause feature enabling you to remove the paddle and shape the dough into a more attractive loaf. The wide pan allows for that, also - especially if you are making a smaller loaf.
I did try the artisan dough feature but didn't have good luck with it. It might have been my recipe - I didn't use the bread machine recipe. The kneading paddle really works well and mixes up the dough extremely well - incorporating everything and producing a well shaped and textured dough. As I usually remove my dough to bake in the conventional oven - I can live with the over-browning and as I said - just watch it to remove early when I do use the full cycle. Many menu selections and choices with good time records in the instruction book included. Cuisinart quality is evident.
